AAPMD SPECIAL ENDEAVOUR WEBINAR: Toddlers in the Crosshairs

Sugar overconsumption in children often results in early childhood caries (ECC) and early childhood overweight (ECO). Three new diseases now also afflict children. Type 2 diabetes mellitus (T2DM) was unheard of before 1980: now it is one-third of all pediatric diabetes diagnoses. Similarly, non-alcoholic fatty liver disease was not even discovered until 1980, and now 25% of children have fatty liver. Finally, prior to Christian Guilleminault’s 1976 Pediatrics publication ‘Sleep Apnea in Eight Children,’ obstructive sleep apnea (OSA) had commonly been described as an ‘adult disease.’ Interestingly, many of the eight 5-14 year old children in Guilleminault’s study were described as being of ‘….abnormal weight, and progressive development of hypertension.’ Today, many children have OSA, and not necessarily because of obesity. Drs. Lustig and Boyd have been close collaborators over several years developing their hypothesis that dentists who provide care for children are not only optimally positioned to prevent caries through encouragement of healthy eating (e.g., discouraging sugar overconsumption, etc.) but also well-suited to be collaborators with other healthcare professionals who are collectively concerned about recent disturbing secular trends in unhealthy weight gain in kids. This lecture will discuss the effects of early nutritional practices on cellular and organ-system developmental programming that now render our children vulnerable to chronic disease.

Robert H. Lustig, M.D., M.S.L., is Emeritus Professor of Pediatrics in the Division of Endocrinology and Member of the Institute for Health Policy Studies at UCSF and neuro-endocrinologist, with expertise in metabolism, obesity, and nutrition. He is one of the leaders of the current “anti-sugar” movement that is changing the food industry. Dr. Lustig graduated from MIT in 1976, and received his M.D. from Cornell University Medical College in 1980. He also received his Masters of Studies in Law (MSL) degree at University of California, Hastings College of the Law in 2013. He is the author of the popular books Fat Chance (2012), The Hacking of the American Mind (2017), and Metabolical: The Lure and the Lies of Processed Food, Nutrition, and Modern Medicine (2021). He is the Chief Science Officer of the non-profit Eat REAL, he is on the Advisory Boards of the UC Davis Innovation Institute for Food and Health, the Center for Humane Technology, Simplex Health, Levels Health, and ReadOut Health, and he is the Chief Medical Officer of BioLumen Technologies, Foogal, Perfact, and Kalin Health.

Dr. Boyd is a Pediatric Dentist in Chicago. He is an attending instructor in the Pediatric Dentistry residency program at Lurie Children’s Hospital where he serves as a dental consultant to the Sleep Medicine service.  His clinical focus is centered on prevention of oral and systemic disease through promotion of healthy breathing and eating; his primary research interest is in the area of infant/early childhood feeding practices and how they impact palatal-facial development, naso-respiratory competence, and neuro-cognitive development. He is currently a visiting Scholar at U. Pennsylvania doing research in the areas of anthropology and orthodontics.  He has also recently been appointed as an adjunct Assistant Professor in the Dept of Anthropology at the University of Arkansas where he is mentoring PhD candidate research.
